Caraway Liqueur Recipes

Nalivkas (Fruit Liqueurs)

 
 
Caraway Liqueur
Ingredients:

3/4 cup water
1 1/2 cup sugar
2 tablespoons caraway seed
1 teaspoon fennel seed
1 teaspoon anis seed
1 teaspoon coriander seeds
1 teaspoon dried angelica root, finely chopped
3 whole cloves
2 1/2 cups 100-proof vodka
Instructions:
Bring sugar and water to a boil over medium high heat. Stir constantly to prevent scorching. Add caraway, fennel, aniseed, coriander, angelica and cloves and boil for 4 minutes. Remove from heat and let stand until just warm. Use a coarse sieve or colander to strain out solids, then discard. Strain again using a fine mesh strainer. Pour into clean 1 quart container with tight fitting lid. Add vodka. Cover and let stand in a cool, dark place for 1 month. Filter liqueur into final container.
Kummel (Caraway Liqueur)
Ingredients:
3 Tbs. Caraway seed, crushed but not powdered
1 tsp. Fennel seed crushed but not powdered
3 whole cloves
3 cups vodka
1 cup water
1 cup sugar
Instructions:
Combine all ingredients except sugar and water in an aging jar. Allow this to age for 2 days. Remove cloves and allow to age for 1 month. Strain seeds and place into aging jar. Make simple syrup and add to aging jar. Age for an additional month.
Kummel Liqueur
Ingredients:

6 c 80 proof vodka
2 c Water
16 ts Whole caraway seed
6 Chinese anise seeds
1 ts Ground nutmeg
1 ts Whole coriander seed
1/2 ts Ground cinnamon
4 c White sugar
Instructions:
Mix all ingredients. Cover. Shake vigorously for two or three minutes. Do this each day until no more sugar settles to the bottom. Let mixture stand for one month. Carefully pour liqueur through a sieve. Discard seeds and residue at bottom of the bottle.
