Quince Liqueur Recipes

Nalivkas (Fruit Liqueurs)

 
 
Quince Liqueur 1
Ingredients:

A one-litre preserving jar
3 quinces
60 g caster sugar
About 600 ml vodka
Instructions:
Wipe the fluff from the quince with a dry cloth. Cut them in half so that they will fit into the feeder tube of the Magimix. Grate - yes, really, the whole fruit, skin, pips and all. The scented fruit will more or less fill your jar. Add the sugar, then the vodka, making sure that all the fruit is covered. Seal. Put in a dark place for a couple of months - there's no need to turn it.
Quince Liqueur 2
Ingredients:

2 large quinces
1 cup sugar
2 cups vodka
Instructions:
Cut the quinces lengthwise in quarters, then mince or grate them (skins and seeds included) in a food processor. Place them in a jar with at least a 2 ½-quart capacity-you need room for shaking. Add the vodka, then the sugar, and shake vigorously. Keep the jar in a cool, shadowed place. Shake the contents of the jar every other day for 10 days, then when you think of it after that, about once a week for at least 4 additional weeks. Strain the eau-de-vie through a sieve lined with a double thickness of dampened cheesecloth, into a sterilized bottle. Seal with a cork.
Quince Liqueur 3
Ingredients:

10 large quince
1 liter aquavite or grappa (you can use pure alcohol or in a pinch, vodka)
15 bitter almonds
2 sticks cinnamon
10 whole cloves
1 teaspoon grated nutmeg
2 cups sugar
2 cups water
Instructions:
Grate the quince, put in a large glass bowl and mix with aquivite or grappa. Add bitter almonds, cinnamon, cloves and grated nutmeg. Cover tightly so the alcohol won't evaporate and set in a dark cupboard for 2 months. Strain, discard the pulp and spices, and then filter the liquid again (pour through a double layer of coffee filters with a big wad of sterile cotton in the bottom). Drop by drop, the liquid will come out completely clear and transparent. Apart, boil sugar with water until the sugar is completely dissolved. Cool. Then mix the cooled sugar syrup with the filtered alcohol liquor, bottle and serve.
Quince Liqueur 4
Ingredients:

8 Tbsp Quince Jelly Or Jam
1 Fifth 80-Proof Vodka
Sugar Syrup To Taste
Instructions:
Steep the jelly/jam in a jar with the vodka for three weeks, shaking occasionally. Filter through cheesecloth. Taste for sweetness and add sugar syrup in small increments if desired, stirring and tasting after each addition.
