Strawberry Liqueur Recipes

Nalivkas (Fruit Liqueurs)

 
 
Strawberry Liqueur 1
Ingredients:

1 pt fresh strawberries
2 1/2 c Vodka
1 Vanilla bean
1/2 c Sugar Syrup
Instructions:
Select full colored and plumb berries, avoiding stained baskets (sign of overripe or softened and decayed berries). Do not wash until ready to use as water causes mold to form. Rinse berries and place in a mixing bowl, lightly crushing to release flavor. Add vodka and vanilla bean. Stir and store in bottle in cool dark place for 3 weeks. Strain mixture through dampened cheesecloth squeezing as much juice as possible. Pour back into bottle adding sugar syrup to taste (1/3 to 1/2 cup per pint) and age another 3-5 weeks.
Strawberry Liqueur 2
Ingredients:

3/4 pound (350 g) very ripe strawberries (wild if possible)
A half-inch piece of vanilla bean, crushed
1 3/4 cups (350 g) sugar
1/2 cup water
1 1/3 cups (350 ml) grain alcohol
Instructions:
Hull the strawberries and lightly rinse them, then put them in a 2-quart glass jar. Add the other ingredients, seal the jar, and steep the strawberries for a month, gently shaking them once or twice a day. When you have finished steeping, remove the strawberries by gently pouring the liqueur through a wire mesh strainer and into a bowl. Let the strawberries drain well, then transfer the liqueur into a clear glass bottle, using a funnel and a piece of filter paper. Stopper the bottle, let it set for about 7 months, and it's ready.
Strawberry Liqueur 3

Ingredients:

3 cups fresh strawberries, ripe and unblemished
1 1/2 cups sugar
2 cups 100% proof vodka
1 cup water
1 teaspoon fresh squeezed lemon juice
1 teaspoon orange zest
1/2 teaspoon lemon zest
Instructions:
Wash and stem the berries. In a bowl crush the berries and sugar together. Let stand for 1 hour. Transfer mixture to a clean 2 qt container. Add vodka, water, lemon juice, and zests. Cover and let stand in a cool dark place for 2 days, shaking several times each day. Press the mixture through a fine mesh sieve, discard solids. Transfer the liqueur to a clean container. Cover and let stand for 1 week. Filter into a decorative bottle with a tight fitting lid. Age for at least 1 month before serving.
 
Strawberry Liqueur 4
Ingredients:
500 g (1 lb 1oz) Strawberries
150 g (5 oz) Sugar
425 ml (15 fl oz) vodka
15 ml (1tbsp) citric acid solution
Instructions:
Place alternate layers of sugar and tawberries in a clean glass jar, add the citric acid solution. Cover fruit with vodka, wait 2 days and then shake or stir the contents once a day for tw weeks. Strain the fruit through a fine muslin cloth, squeeze the fruit and then leave to settle. Siphone off the liquid into small bottles. Store for three months before drinking.
Strawberry Liqueur Ice Cream
Ingredients:

2 cups strawberries
1 miniature bottle Cointreau (to taste)
2 tablespoons caster/superfine sugar
1/2 pint double cream
Instructions:
Remove the hulls from the strawberries. Wash the strawberries and drain off any water. Put them into a bowl. Pour the Cointreau onto the strawberries and leave to soak in for 2 hours. Blend the strawberries very briefly in an electric blender and then freeze them in a suitable container until just frozen. Whip the cream until it stands in soft peaks and fold in the sugar. Stir in the semi-frozen fruit. Return to freezer for 1 1/2 hours. Remove from freezer, turn into a bowl and whip to break up any large ice crystals. Return to freezer and freeze until firm.
