Bilberry (Blueberry, Whortleberry) Liqueur Recipes

Nalivkas (Fruit Liqueurs)

 
 
Blueberry Liqueur 1
Ingredients:

1 lb. (450 g) fresh blueberries
3 cups (710 ml) vodka or 1 1/2 cup pure grain alcohol + 1 1/2 cup water
1 1/2 cup (350 g) sugar
Instructions:
Rinse and check the blueberries and place them in a jar, add vodka, cap with a tight lid and mix. Stir daily during the first days, later at least once a week for 3-4 weeks. Filter the mixture of berries and alcohol and transfer the liquid to a bottle. Add sugar and shake until dissolved. After three months strain the liqueur thru a cloth. Add some more sugar if necessary. The liqueur should mellow for at least 3 months before drinking, preferably for 6 months.
Blueberry Liqueur 2
Ingredients:

3 c Fresh blueberries or blackberries 1 Clove
1/2 c Sugar syrup
To taste 2 c Vodka
1 Lemon vedge, scraped peel
Glycerine
Instructions:
Rinse with cold water. Rinse berries and lightly crush. Add vodka, lemon peel, and clove. Pour in dark bottle and store for 3-4 months. Strain through dampened cheesecloth squeezing out as much juice as possible. Add sugar syrup to taste and store another 4 weeks. Liqueur will tend to be on the watery side. Try adding glycerine if a thicker consistency is desired.
Blueberry Liqueur 3
Ingredients:


2 cups fresh blueberries
1 cup sugar
1/2 cup brandy
3/4 cup light corn syrup
1 tsp. lemon zest
1 tbsp. fresh lemon juice
Instructions:
Place berries in a clean 2 quart jar and add sugar. Crush berries with wooden spoon and let stand for 1 hour. Add vodka and brandy, tightly cap and shake vigorously. Add syrup, lemon zest and juice. Cover and let stand in a cool dark place for 2 weeks. Use a fine mesh strainer to strain out solids. Discard. Transfer liqueur to clean container and let stand for 1 week. Rack or filter into final container. Age for 1 month more before serving.
Blueberry Liqueur 4
Ingredients:

16 ounces frozen blueberries
1 1/2 cups vodka
1/2 peel lemon, sliced and scraped
3/4 cups sugar syrup
3 whole cloves
Instructions:
Let blueberries completely thaw. Pour berries and any juice from the bag into a bowl. Crush with a fork, and put in a 1-liter jar. Add vodka, lemon peel and cloves. Steep for 3 months, shaking gently every couple of days to prevent settling.
 
Blueberry Liqueur
Ingredients:
500 g Blueberries
1 Clove
Zest of 1 Lemon
100g White Sugar
3/4 ltr Vodka
Instructions:
Wash blueberries and prick skins with a needle. Place fruit into a 1.5 ltr Kilner Jar. Add Sugar, Clove and Lemon Zest. Top up with Vodka. Shake each day for 2 weeks, store for 4-6 months and dark, cool place. Strain and bottle.
Vodka Blueberry Liqueur
Ingredients:

1 cup white sugar
2 cups vodka
3 cups fresh blueberries
Instructions:
In a 2-quart jar dissolve sugar in vodka. Pour in blueberries and cover the jar. Store in cool, dark place for 2 months. Occasionally shake gently. Strain and serve in cordial glasses or if you prefer, over ice.
