Lemon Schnapps Recipes

Nastoykas (Tinctures)

 
   Lemon schnapps - based on fresh lemon peels (zests) - has a fine golden colour and a fresh, enjoyable and aromatic taste. Very good as appetizer and wonderful in hot tea. Serve with marinated herring, caviar, salmon, crayfish, shrimps, gravlax, sea trout, lamb, chicken, and many other dishes.
Lemon Schnapps
Ingredients:

4 lemons
Unflavoured vodka - 40% alcohol content (80 proof)
Instructions:
Scrub 4 lemons thoroughly to remove dirt or any chemical residue and wax. Dry and peel them thinly with a potato peeler or zester. When peeling it's very important that you avoid the white inner rind that will otherwise ruin your schnapps because of its unpleasant bitterness. Put the lemon peels in a clean glass jar with tight-fitting lid. Cover well with clear, unflavoured vodka - 40% alcohol content (80 proof). Let steep for 1-7 days in a dark place at room temperature, 18-20°C (64-68°F). Shake lightly and taste it from time to time. It must not get bitter. Strain and filter your infusion into a clean glass bottle or jar with tight-fitting lid. Store (age) for at least 1 month in a dark place at room temperature before serving. Taste it from time to time.
   Lemon balm schnapps - based on fresh lemon balm leaves - is a wonderful schnapps. Fresh with a mildly acid taste of lemon and honey-like fragrance. Serve with caviar, crayfish, gravlax, salmon, herring, chicken, lamb and veal.
Lemon Balm Schnapps
Ingredients:


25-30 Lemon balm leaves
Unflavoured vodka - 40% alcohol content (80 proof)
Instructions:
Clean the leaves carefully - but only if necessary. If wet - leave them to dry for a short period in the shadow - on paper towel. Put 25-30 leaves in a clean glass jar with tight-fitting lid. Cover with 50 centiliter clear, unflavoured vodka - 40% alcohol content (80 proof). Let steep for 48 hours in a dark place at room temperature, 18-20°C (64-68°F). Shake lightly and taste it from time to time. Strain and filter your infusion into a clean glass bottle or jar with tight-fitting lid.
   Lemon thyme schnapps - based on fresh lemon thyme leaves and flower buds - has a fine yellow colour, and a wonderful, characteristic taste and flavour. It's a schnapps with great softness and roundness. Serve with fish, chicken, lamb, soup and vegetables.
Lemon Thyme Schnapps
Ingredients:

Flower buds and leaves
Unflavoured vodka - 40% alcohol content (80 proof)
Instructions:
Rinse the flower buds and leaves carefully - but only if necessary. If wet - leave them to dry for a short period in the shadow on paper towel. Put 1 deciliter leaves and flowers in a clean glass jar with tight-fitting lid. Add 70 centiliter clear, unflavoured vodka - 40% alcohol content (80 proof). Let steep for 1-3 days in a dark place at room temperature, 18-20°C (64-68°F). Shake lightly and taste it from time to time. Strain and filter your infusion into a clean glass bottle or jar with tight-fitting lid.
Lemonade Vodka
Ingredients:

1 cup sugar
1/3 cup water, plus 8 cups
4 lemons, juiced
Vodka
Ice cubes
Instructions:
In a saucepan, combine the sugar and 1/3 cup water and place over medium heat. Bring the mixture to a boil, then cook the sugar until dissolved but the syrup is still clear. Do not cook the sugar until it starts to turn color. Remove from heat and cool. In a pitcher, combine the syrup, 8 cups water, the lemon juice, vodka and ice and stir to combine. Pour into tall glasses.
